Sichuan Dan Dan Noodle Recipe

Ingredients for Sichuan Dan Dan Noodles: Noodles – 1 bundle, Green onions – 1 stalk, Garlic – 1 clove, Pork – 50g, Peanuts – 5g, Cabbage – 1 leaf, Soy sauce – 2 teaspoons, Chili oil – 1 tablespoon, Sichuan pepper powder – a pinch, Salt – a pinch, Chicken essence – a pinch.
Method of making Sichuan Dan Dan Noodles: Step 1: Prepare the ingredients. Step 2: Dry fry the peanuts in a pan until fragrant. Step 3: Chop the fried peanuts and set aside in a bowl. Step 4: Mince the pork. Step 5: Heat oil in a pan, stir-fry the pork until it turns golden brown, add 1 teaspoon of soy sauce and mix well, then set aside in a small bowl (you can add bean sprouts for more authenticity).


Step 6: Mince the garlic and chop the green onions. Step 7: Boil water in a pot, add noodles and cabbage. Step 8: While the noodles are cooking, add minced garlic, 1 tablespoon of chili oil, 1 teaspoon of soy sauce, a pinch of salt, a pinch of chicken essence, and a pinch of Sichuan pepper powder to the bowl. Increase the proportions if you have more noodles (originally there was a spoonful of pork fat, but the author found it difficult to make in Melbourne).


Step 9: After the noodles are cooked, place the cooked cabbage at the bottom of the bowl, add the noodles, ladle some noodle soup, and finally sprinkle minced pork, peanuts, and green onions on top.
