Ingredients for Tofu Pudding:
– 250g soybeans
– Appropriate amount of bittern water
– Appropriate amount of chili powder
– Appropriate amount of ginger powder
– Appropriate amount of scallions
– Appropriate amount of garlic powder
– A small amount of peanuts
– Appropriate amount of peanut oil
– Appropriate amount of salt
– Appropriate amount of monosodium glutamate
Making Method of Tofu Pudding:
Step 1: The soybeans brought from my mother’s hometown have been ground into powder. Soak the powder in water for 10 – 20 minutes. These are authentic homegrown soybeans, rich in nutrition and great for making soy milk.
Step 2: Add an appropriate amount of water to the soaked soybean powder and bring it to a boil in a pot. Pay attention to the heat as it may overflow when boiling.
Step 3: Filter the boiling soybean milk with residue to separate the soybean dregs from the soybean milk. We mainly need the soybean milk. I filtered it with a fine – meshed filter cloth brought from home. This is the bag with the remaining soybean dregs after filtering. This step was not photographed.
Step 4: Pour the soybean milk into a container. I put it in a frying pan. Then dilute an appropriate amount of bittern water, preferably with soybean milk. “In our place, we use bittern water. In some places, gypsum is used, and in some, sour soup is used.” Slowly stir the diluted bittern water evenly into the soybean milk pan with a small spoon. Note: Don’t add too much or too fast at once.
Step 5: Add the diluted bittern water in several times. After about 10 minutes, you will see the formation of tofu pudding. At this time, you can appropriately turn on the heat to keep the soup warm. When more and more tofu pudding takes shape, use a tool to press it into shape. I used a common bamboo winnowing basket at home to press it, as shown in the picture.
Step 6: Next, prepare the chili sauce. Add appropriate amounts of chili powder, ginger and garlic powder, salt, and monosodium glutamate. Crush the peanuts after frying them in oil and put them into the chili powder. Mix well, pour in 8 – mature hot peanut oil, and stir evenly. Add scallions. If you have sesame oil, you can add a little. As shown in the picture.
Step 7: Use a knife to cut the formed tofu pudding in the pot into small pieces and put them into bowls.
Step 8: A bowl of white tofu pudding, paired with spicy and fragrant chili oil, and a bowl of white rice. Your appetite will be whetted. Let’s start eating!!
Step 9: The finished tofu pudding! It’s quite successful!
Cooking Tips for Tofu Pudding:
