Ingredients and Cooking Method of Sichuan Sour Soup Duck

Ingredients of Sichuan Sour Soup Duck:
– 1 local duck
– Appropriate amount (not too much) of Sichuan pickled sour radish
– 5 Sichuan pickled chili peppers
– 5 slices of ginger
– 2 scallions
– Appropriate amount of Chinese prickly ash
– Appropriate amount of cooking wine
– 1 spoon of light soy sauce

Steps of Making Sichuan Sour Soup Duck:
Step 1: Buy a freshly slaughtered old duck. First, put the duck, ginger, scallions, Chinese prickly ash, cooking wine and water into a pot and blanch it. Bring to a boil for 10 minutes. Then take it out and wash it.

Step 2: Wash it clean and drain the water.


Step 3: I brought the pickles from Sichuan by myself, including self-pickled sour radish and chili peppers. Prepare an appropriate amount, not too much, otherwise it will be too sour. Generally, I pickle the radish for half a year until it turns this color, then I can cook the sour soup duck. If you don’t have self-made pickles, you can buy ready-made bagged sour soup duck seasoning. There are many on Taobao. Just search for “Sichuan sour soup duck seasoning” and you will find it.


Step 4: Add rapeseed oil and stir-fry ginger, scallions, Chinese prickly ash, pickled radish and pickled chili peppers until fragrant. Then add light soy sauce and cooking wine, and bring to a boil with water.


Step 5: Put the duck into the pot after it boils. When it boils again, pour it into a slow cooker and simmer over low heat.


Step 6: Simmer for two hours. It depends on the tenderness of the duck you bought.


Step 7: This can be eaten as a soup or used to cook hot pot. After eating the duck meat, you can cook some meat and vegetables you like. It’s sour and spicy and appetizing in summer! If you like, you can put some scallions when serving.
