Ingredients of Chaoshan Snack Yamu Nian
300g glutinous rice flour
250g boiling water
350g fillings: taro paste, red bean paste, black sesame paste, etc. can be used
Appropriate amount of white sugar
Appropriate amount of ingredients that can be used: ginkgo nuts, tremella, wolfberries, lotus seeds, taro, etc.
Steps to Make Chaoshan Snack Yamu Nian
Step 1: Prepare all the ingredients.
Step 2: Add red dates and tremella, add sugar according to personal taste, and cook. During this process, you can do other things first. Just turn off the heat after it boils.
Step 3: Prepare the water for boiling yamu nian first.
Step 4: While boiling water in the kettle, divide the red bean paste into evenly sized granules.
Step 5: Add boiling water to the glutinous rice flour. First stir with chopsticks and then knead into this shape.
Step 6: Wrap the red bean paste. You can roll it into a round or oval shape. If you want to wrap several kinds of fillings, you need to distinguish them. Wrap the red bean paste in an oval shape and the taro paste in a round shape, which is easy to recognize.
Step 7: Mine is oval. When wrapping, turn on the water prepared for boiling yamu nian.
Step 8: After it boils, put in the yamu nian. Be sure to wait until big bubbles appear.
Step 9: After it is cooked and floats, take it out.
Step 10: Pour it into a bowl and add sugar water, and it’s done.
Step 11: The soup is clear and transparent.
Cooking Skills of Chaoshan Snack Yamu Nian
The reason for boiling separately is that the water will become a bit milky white when boiling yamu nian. If you boil them separately like me, the water will be very clear. Keep a little more flour to prevent it from being too sticky if too much water is added. Different brands of glutinous rice flour have different water absorption rates. There are about 25 yamu nian.
