How to Make Lu Dagun (Beijing Snack) – Recipe and Cooking Tips

Ingredients for Lu Dagun: 200 grams of glutinous rice flour, 20 grams of milk powder, 190 grams of warm water, 200 grams of red bean paste, 50 grams of cornmeal.
Method: Step 1: Prepare the ingredients. Step 2: Mix glutinous rice flour, milk powder, and warm water together until well combined. Step 3: Grease a steaming tray and pour the batter into it. Step 4: Steam the batter in a steamer for 20 minutes with high heat for the first 10 minutes and low heat for the last 10 minutes. Step 5: Fry the cornmeal in a non-stick pan until it is well-cooked and fragrant. Step 6: Remove the steamed glutinous rice batter and let it cool. Spread the fried cornmeal on a silicone mat, then lay the warm and cooled rice batter on top, roll it out into a thin sheet, spread red bean paste evenly, and roll it up.
